Mary Berry’s Orange Layer Cake

For regular readers you’ll know that I’ve been doing some simple baking for a local cafe where my daughter works. An orange cake was a recent request and this one is a really easy cake to bake as it’s a just chuck it all in the bowl recipe and whisk it up.

Here’s what you’ll need:

For the spongeIMG_0888
225g baking spread (I used block butter)
225g self-raising flour
1 level tsp baking powder
100g golden caster
100g brown sugar
4 large eggs
finely grated zest of 2 oranges

For the butter icing
150g softened butter
300g icing sugar, sifted
finely grated zest of 2 oranges

For the glaze
25g caster sugar
juice of 2 oranges

What you do

Heat the oven to 180°c and prepare 2 x 20cm sandwich tins.

Weigh all the sponge ingredients and add to a large bowl and mix with electric mixer or wooden spoon and divide equally between the 2 tins.

Now, I’d ensured that the mixture was spread equally and smooth, the oven was at the right temperature yet this is how my cake cooked. This was about 8mins in to the cooking time and it looks like I’m cooking Yorkshire pudding….why is that?

IMG_0893Bake for approx 20-25 mins and then cool on a wire rack. Look how the one on the right has folded itself over the cake.

Orange Layer CakeMake the glaze by heating the sugar in a pan with the orange juice, stirring over a low heat until the sugar has dissolved. I made some little holes in the sponge with a cocktail stick and then spread the glaze over the sponges.

Orange Layer CakeTo make the icing, put the butter and icing sugar in a bowl and mix until light and fluffy and stir in the orange. I actually added a couple of teaspoons of milk to make the icing easier to manage and spread.

The finished cake; it wasn’t actually as dark as this – the light wasn’t very good!

My daughter was very kind to bring me a piece home and it was really lovely, the orange taste was strong without being overpowering and the sponge was moist and light – despite looking a tadge overdone, this was a success!
