Blackberry Swirl Yogurt Loaf

For this week’s Novice Baker post I tried a recipe from Asda’s October magazine. I’ve not tried any of their recipes before but they always look very tempting.

This was quite similar to the Blackberry Buttermilk Sponge I made from the Great British Bake Off Everday book. The loaf has a very moist light texture and was a great success with none of it coming home from work 🙂

What you’ll need:

A 24cm lined loaf tinIMG_1451

125g blackberries, fresh or frozen
250g caster sugar
150ml natural yogurt
6tbsp sunflower oil
3 eggs
1 1/2 tsp vanilla esscence
250g plain flour
2tsp baking powder
Flaked almonds to decorate

What you do:

Preheat the oven to 180°c.

Puree the blackberries with 50g of the caster sugar and set aside. Try not to do as I did and underestimated my twenty year old processor’s power; my blackberries ended up everywhere and all over my top! Fortunately I had extra!

Put the yogurt, oil, eggs, vanilla and remaining sugar in a bowl. Whisk together.

Then gently fold into the mixture until just combined.

Blackberry swirl yogurt loafThe recipe advises that the sifted flour should be gently combined into the wet mixture but this left me with flour lumps so I gave it a quick mix with the electric whisk which didn’t do any harm.

Pour half the mixture into the tin, and add spoonfuls of your blackberry puree. Create swirls with a skewer; I used a cocktail stick. Repeat with the rest of the mixture.

The recipe didn’t say how many spoonfuls but top tip; use small spoonfuls and dot them around in smaller spots.

Blackberry swirl yogurt loafBake for 55 minutes to an hour. Top with almonds and cool on a wire rack.

Blackberry swirl yogurt loafTop tip; add the almonds into the loaf before cooking because adding after was just pointless as they just fell off.

As an alternative flavour you could swap out the blackberries for raspberries and the vanilla to lemon.
