Vanilla Cupcakes

Happy New Year fellow bakers and readers, thanks for visting my first baking post of the new year.

Firstly, I want to show off a little, have a look at what my lovely mum bought me for Christmas. I would never have asked for such an expensive gift and it was a fab surprise!


I wanted to start off with a simple-ish recipe with my new mixer as I’ve never used one of these before and therefore not familiar with its speeds and paddles etc.

What you’ll need:

For the sponge (makes approx 12 cupcakes)IMG_1758

225g soft butter
225g caster sugar
225g self-raising flour
2 tsp baking powder
4 large eggs
Vanilla extract or essence

For the frosting

280g icing sugar
140g softened butter
Few drops of milk
Vanilla extract or essence
Sprinkles, if required, to decorate

What you do:

Pre-heat the oven to 180Ā°c. Prepare a muffin tin with paper cases.

Put the butter in a large mixing bowl, and add the caster sugar, flour, baking powder, essence and eggs (basically, chuck all your ingredients in the bowl together). Beat with an electric mixer for 2 minutes until smooth and then divide between the cases equally.

This was the first bake with my new mixer and it might have been easier / better if I’d used the correct paddle. Durr! Read the instruction manual Lindsay!! šŸ˜‰

Bake for approx 15 – 20 minutes and leave to cool. Prepare your icing when the cakes are cool and ice/decorate as you like. Using an icing bag and icing a cake is a lot harder than it looks. Knowing where to start, in the middle, on the outside…..??

Vanilla Cupcakes

I really do need to take my photos with a decent camera, not my iPad as I can’t control the light and also there’s no flash on the iPad. The bottom right photo is the most true to life in terms of the colour.

    Those look so pretty and delicious, such a great gift! I need to get a cupcake mold myself, because I made some for New Years Eve with my niece and they didn’t look right. šŸ˜‰
