Halloween Cupcakes

I came across these cupcakes on the BBC food website, you can check out the site here. Although these have a decorated Halloween topping, they can easily be decorated in other ways. It’s also a really simple cake mix too.

What you’ll need:

125g plain flour     IMG_1554
25g cocoa powder
1½ tsp baking powder
150g caster sugar
50g butter, softened at room temperature
1 free-range egg
8 tbsp milk

For the cream cheese icing
50g cream cheese
25g butter, softened at room temperature
125g icing sugar, sifted
½ tsp vanilla essence

For the chocolate icing
25g icing sugar
1 tbsp cocoa powder

What you do:

Put 9 muffin cases into a muffin tray.

Sift the flour, cocoa powder and baking powder into a bowl. Add the sugar and butter and whisk together until combined.

Whisk in the egg and the milk until smooth.

Share mixture between the cases.


Bake for approx 20 – 25 minutes. Leave to cool on a wire rack. Now comes the interesting part…making the icing and the decorating.

I made these cakes for my daughter who likes simple cakes so I just made some simple glacé icing for hers – icing sugar mixed with a few drops of water.

For my cupcakes, I made the cream cheese frosting by beating the cheese and butter together and then adding the icing sugar and vanilla.

Spoon the icing onto the cakes leaving a gap around the edge if you can (my glacé icing ran to the edge of the case as it was a bit runny).

To make the chocolate icing sift the icing sugar and cocoa powder into a bowl and add 2 tablespoons of water to mix to a thick paste.

Put the icing into a piping bag or if you don’t have one you can use a sandwich bag with the corner snipped off. Pipe 3 circles onto each cake and then run a toothpick from the centre to the edge to create the cobweb effect.

Top tip: if you use the glacé icing, don’t let it set before you try to make the cobweb effect as it doesn’t drag through as easy – you can see that from my photos. It was easier with the cream cheese frosting.
